- 1 small cabbage, chopped
- 1 Vidalia onion, chopped
- For the Sauce:
- 1 can (10.5 oz) cream of chicken soup
- 1 cup mayonnaise
- 1/2 stick butter, melted
- For the Topping:
- 1 stick butter, melted
- 1 cup shredded cheddar cheese
- 1 sleeve Ritz crackers, crushed
Instructions
- Preheat oven to 350°F.
- Spray a baking dish with nonstick cooking spray.
- Cut up the cabbage and spread it evenly at the bottom of the pan.
- Chop the Vidalia onion and layer it on top of the cabbage.
- In a bowl, mix the cream of chicken soup, mayonnaise, and melted butter until smooth. Spoon the mixture over the onions.
- In another bowl, combine the melted butter, shredded cheddar cheese, and crushed Ritz crackers. Sprinkle this topping evenly over the casserole.
- Bake in the preheated oven for 45 minutes, until golden and bubbly.
- Let the casserole cool slightly before serving.
Notes
- You can use other types of onions if you don’t have Vidalia.
- Make it even creamier by adding a bit more mayonnaise or butter, depending on your preference.
- If you prefer a bit more crunch, sprinkle extra crushed crackers on top before baking.
