Looking for a comforting dish to warm up your day? This Cabbage Casserole is loaded with savory flavors from tender cabbage, caramelized onions, and a creamy sauce topped with cheddar cheese and buttery Ritz crackers.

Ingredients

  1. 1 small cabbage, chopped
  2. 1 Vidalia onion, chopped
  3. For the Sauce:
    • 1 can (10.5 oz) cream of chicken soup
    • 1 cup mayonnaise
    • 1/2 stick butter, melted
  4. For the Topping:
    • 1 stick butter, melted
    • 1 cup shredded cheddar cheese
    • 1 sleeve Ritz crackers, crushed

Instructions

  • Preheat oven to 350°F.
  • Spray a baking dish with nonstick cooking spray.
  • Cut up the cabbage and spread it evenly at the bottom of the pan.
  • Chop the Vidalia onion and layer it on top of the cabbage.
  • In a bowl, mix the cream of chicken soup, mayonnaise, and melted butter until smooth. Spoon the mixture over the onions.
  • In another bowl, combine the melted butter, shredded cheddar cheese, and crushed Ritz crackers. Sprinkle this topping evenly over the casserole.
  • Bake in the preheated oven for 45 minutes, until golden and bubbly.
  • Let the casserole cool slightly before serving.

Notes

  • You can use other types of onions if you don’t have Vidalia.
  • Make it even creamier by adding a bit more mayonnaise or butter, depending on your preference.
  • If you prefer a bit more crunch, sprinkle extra crushed crackers on top before baking.
