  • 4 basa fillets
  • 1 tsp minced garlic
  • ¼ cup mayonnaise
  • ¼ cup shredded asiago cheese (plus extra for sprinkling)
  • 2 tbsp butter
  • ¼ tsp dried basil
  • ¼ tsp lemon pepper
  • Pinch cayenne pepper
  • Pinch turmeric
  • ½ tsp lemon zest
  • 2 tsp lemon juice
  • Salt and pepper, to taste

Crispy Topping

  • ¼ cup panko breadcrumbs
  • 1 tsp light olive oil

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix together mayonnaise, minced garlic, asiago cheese, butter, dried basil, lemon pepper, cayenne, turmeric, lemon zest, and lemon juice. Season with salt and pepper to taste.
  3. Place the basa fillets in a baking dish. Spread the mayo-cheese mixture evenly over each fillet.
  4. Sprinkle panko breadcrumbs and extra asiago cheese on top. Drizzle lightly with olive oil for extra crispiness.
  5. Bake for 15–20 minutes or until the fish flakes easily and the topping is golden brown and crisp.
  6. Serve hot, optionally with a wedge of lemon or a side of rice or veggies.

Notes

  • Swap asiago with parmesan or romano if desired.
  • This recipe also works beautifully with cod or haddock.
  • For extra crunch, broil the dish for the final 2 minutes—watch closely!
  • Serve with steamed broccoli or garlic butter green beans for a full meal.
