Description

Indulge in this luxurious Buttered Lobster Pasta—a rich and creamy dish featuring tender lobster tail meat pan-fried in butter and paired with angel hair pasta and burst cherry tomatoes. The perfect meal for any special occasion or a decadent treat.


Ingredients

  • 150 g Westgold salted butter
  • 1 lobster tail (500g – 1kg)
  • 1 tablespoon extra virgin olive oil
  • 1 shallot, finely diced
  • 2 garlic cloves, finely diced
  • ¼ cup white wine
  • 400 g cherry tomatoes
  • 250 g angel hair pasta
  • Parsley, finely diced
  • ¼ lemon
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of heavily salted water to a boil.
  2. Remove the lobster meat from the shell by cutting down each side of the tail with shearing scissors. Peel the shell away and chop the meat into large pieces.
  3. In a deep saucepan over medium heat, melt 50g of butter with the olive oil. Once the butter starts foaming, reduce the heat to low and add the lobster meat. Cook for 3-4 minutes or until the flesh is white and pink. Remove the lobster and set aside.
  4. Add the shallots and garlic to the pan and cook for 2 minutes, stirring occasionally. Deglaze the pan with white wine, scraping up the brown bits. Cook until 80% of the wine has evaporated.
  5. Add the cherry tomatoes to the pan and cook for 10-15 minutes, until the tomatoes burst open and become jammy in texture.
  6. Cook the pasta in the boiling water, draining it 2 minutes before the recommended cooking time. Reserve 1 cup of pasta water.
  7. Add the cooked pasta and 50-100g of butter to the saucepan with the tomatoes. Slowly incorporate the reserved pasta water and butter until you get a creamy and glossy sauce.
  8. Add the lobster back to the pan along with fresh parsley and a squeeze of lemon juice. Stir through.
  9. Serve the lobster pasta immediately.

Notes

  • Use high-quality salted butter for the best flavor.
  • Be careful not to overcook the lobster meat, as it can become tough.
  • If you want more richness, increase the amount of butter in the sauce.
  • This dish is best served immediately while the pasta is warm and the sauce is creamy.
