  1. 220g flour 00 (for a soft, tender texture)
  2. 150g butter (room temperature, for richness)
  3. 125g powdered sugar (adds sweetness and lightness)
  4. 80g potato starch (for added softness)
  5. 3 medium egg yolks (to bind the dough)
  6. 1 sachet of vanillin (for a lovely vanilla flavor)
  7. Jam (of your choice, for filling)

Instructions

  • Prepare the Dough:
    In a bowl, combine the flour, potato starch, powdered sugar, and vanillin. Mix well.
  • Add Butter:
    Add the softened butter and work it into the mixture until it forms a buttery texture.
  • Add Egg Yolks:
    Incorporate the egg yolks and mix everything until the dough becomes smooth and homogeneous.
  • Chill:
    Cover the dough and refrigerate for 2 hours to firm up.
  • Shape the Biscuits:
    After chilling, roll out the dough on a floured surface. Use a cookie cutter or your hands to shape the biscuits.
  • Bake:
    Preheat the oven to 160ºC (320ºF). Place the biscuits on a baking tray and bake for 15-16 minutes, or until golden.
  • Fill and Serve:
    Once baked, allow the biscuits to cool slightly before filling with your favorite jam. Serve and enjoy!

Notes

  • You can use any type of jam you prefer, such as raspberry, strawberry, or apricot.
  • For an extra touch, dust the biscuits with powdered sugar before serving.
