For the Bruschetta Topping

  • 4 Roma tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1 tbsp balsamic vinegar
  • Salt and pepper, to taste

For Topping (Optional)

  • 1/2 cup shredded mozzarella cheese
  • Balsamic glaze, for drizzling

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C).
  2. Prepare the chicken: Rub chicken breasts with olive oil, Italian seasoning, salt, and pepper.
  3. Sear the chicken: In an oven-safe skillet, sear chicken over medium-high heat for 2–3 minutes on each side.
  4. Bake: Transfer skillet to the oven and bake for 15–20 minutes or until the chicken is cooked through.
  5. Make the bruschetta topping: While chicken bakes, mix tomatoes, garlic, red onion, basil, and balsamic vinegar in a bowl. Season with salt and pepper.
  6. Optional cheese topping: During the last 5 minutes of baking, top each chicken breast with shredded mozzarella and allow it to melt.
  7. Serve: Remove chicken from oven and spoon the bruschetta mixture on top. Drizzle with balsamic glaze before serving.
