- 1/4 cup fresh basil, chopped
- 1 tbsp balsamic vinegar
- Salt and pepper, to taste
For Topping (Optional)
- 1/2 cup shredded mozzarella cheese

Instructions
- Preheat the oven: Set your oven to 400°F (200°C).
- Prepare the chicken: Rub chicken breasts with olive oil, Italian seasoning, salt, and pepper.
- Sear the chicken: In an oven-safe skillet, sear chicken over medium-high heat for 2–3 minutes on each side.
- Bake: Transfer skillet to the oven and bake for 15–20 minutes or until the chicken is cooked through.
- Make the bruschetta topping: While chicken bakes, mix tomatoes, garlic, red onion, basil, and balsamic vinegar in a bowl. Season with salt and pepper.
- Optional cheese topping: During the last 5 minutes of baking, top each chicken breast with shredded mozzarella and allow it to melt.
- Serve: Remove chicken from oven and spoon the bruschetta mixture on top. Drizzle with balsamic glaze before serving.
Notes
- Use cherry tomatoes for extra sweetness and color variety.
- Make it dairy-free by skipping the cheese.
- Great served over arugula, pasta, or alongside garlic bread.
- Make the bruschetta topping ahead and chill to let the flavors meld.
- Substitute fresh oregano or parsley if you’re out of basil.
