Peach Filling:

  • 4 ripe peaches, pitted and sliced
  • 1/3 cup light brown sugar
  • 1 tbsp all-purpose flour
  • 1/4 tsp ground cinnamon (optional)

Crumb Bars:

  • 3/4 cup unsalted butter, at room temperature
  • 1/2 cup light brown sugar
  • 2 tsp pure vanilla extract
  • 1 2/3 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine sliced peaches, brown sugar, flour, and cinnamon. Set aside.
  3. In another bowl, cream together butter and brown sugar until light and fluffy.
  4. Mix in vanilla, then stir in flour, salt, and baking powder until a crumbly dough forms.
  5. Press two-thirds of the dough into the bottom of the prepared pan to form the crust.
  6. Spread the peach filling evenly over the crust.
  7. Crumble the remaining dough over the top.
  8. Bake for 35–40 minutes, or until the top is golden and the filling is bubbly.
  9. Let cool completely before slicing into bars.

Notes

  • You can peel the peaches if you prefer a smoother filling, but it’s not necessary.
  • Swap in nectarines or plums for a delicious twist.
  • Bars can be stored in an airtight container at room temperature for up to 2 days, or refrigerated for up to 5 days.
  • Serve warm with a scoop of vanilla ice cream for an extra treat!
