Peach Filling:
- 4 ripe peaches, pitted and sliced
- 1/3 cup light brown sugar
- 1 tbsp all-purpose flour
- 1/4 tsp ground cinnamon (optional)
Crumb Bars:
- 3/4 cup unsalted butter, at room temperature
- 1/2 cup light brown sugar
- 2 tsp pure vanilla extract
- 1 2/3 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp baking powder
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine sliced peaches, brown sugar, flour, and cinnamon. Set aside.
- In another bowl, cream together butter and brown sugar until light and fluffy.
- Mix in vanilla, then stir in flour, salt, and baking powder until a crumbly dough forms.
- Press two-thirds of the dough into the bottom of the prepared pan to form the crust.
- Spread the peach filling evenly over the crust.
- Crumble the remaining dough over the top.
- Bake for 35–40 minutes, or until the top is golden and the filling is bubbly.
- Let cool completely before slicing into bars.
Notes
- You can peel the peaches if you prefer a smoother filling, but it’s not necessary.
- Swap in nectarines or plums for a delicious twist.
- Bars can be stored in an airtight container at room temperature for up to 2 days, or refrigerated for up to 5 days.
- Serve warm with a scoop of vanilla ice cream for an extra treat!
