- 1½ pounds Louisiana drum, snapper, or other mild white fish
- 1 teaspoon cumin
- 1 teaspoon Creole seasoning mix
- Black and red pepper, to taste
- 8 small flour tortillas
- Sliced avocado, diced tomato, cilantro sprigs, lime wedges, for garnish
Instructions
- Make the crema: Mix together sour cream, mayonnaise, lime zest, and lime juice. Taste and adjust seasoning, then set aside.
- Prepare the cabbage mixture: In a bowl, combine shredded cabbage, cilantro, red onion, and jalapeños. Add enough of the crema to moisten, reserving the remaining crema for serving.
- Cook the fish: Sprinkle fish evenly with cumin, Creole seasoning, and black/red pepper. Cut the fish into ½-inch strips across the grain. Heat a cast iron griddle over medium-high heat, spray with cooking oil, and cook the fish in batches, turning carefully until golden and cooked through. Keep warm.
- Warm the tortillas: Place tortillas on the hot griddle, turning once, until softened and lightly browned.
- Assemble the tacos: Divide the cabbage mixture among the tortillas, top with the bronzed fish, and garnish with avocado, tomato, and cilantro. Drizzle with the reserved crema and serve with lime wedges.
