Description

These Broccoli Cheddar Quinoa Bites are a delicious and healthy snack or appetizer, packed with protein and flavor. Perfect for meal prep, they’re crispy on the outside and tender on the inside. Enjoy a wholesome snack that’s both nutritious and satisfying!


Ingredients

  1. 1 cup cooked quinoa

  2. 1½ cups finely chopped broccoli

  3. 2 large eggs

  4. ½ cup shredded cheddar cheese

  5. ¼ cup all-purpose or whole wheat flour

  6. ½ teaspoon garlic powder

  7. ½ teaspoon onion powder


Instructions

  • Preheat the oven to 350°F (180ºC).

  • In a large mixing bowl, combine the quinoa, broccoli, eggs, cheese, flour, garlic powder, and onion powder. Mix until well combined.

  • Scoop the mixture into prepared greased muffin tins, using 2 tablespoon portions for each bite.

  • Bake for about 20 minutes, or until the edges are lightly browned.

  • Let cool slightly, then run a knife around the edges of each bite to loosen them from the muffin tin.

 

  • Store in the refrigerator for up to 1 week, or freeze in resealable plastic bags for up to 3 months.


Notes

  • If you prefer a dairy-free version, you can substitute the cheddar cheese with a dairy-free cheese or nutritional yeast.

  • For added flavor, consider adding a pinch of red pepper flakes or a bit of lemon zest to the mixture.
