Ingredients

Scale
    1. 2 ripe peaches, sliced
    2. 1 cup fresh blueberries
    3. 4 cups mixed greens (spinach, arugula, or butter lettuce)
    4. 1/3 cup crumbled feta cheese
    5. 1/4 cup toasted almonds or pecans (for crunch)
    6. 1/4 cup thinly sliced red onion (optional, for a bit of bite)
    7. Fresh basil or mint leaves for garnish (optional)

For the Honey-Lemon Dressing:

    1. 3 tablespoons olive oil
    2. 1 tablespoon honey (or maple syrup)
    3. 1 tablespoon fresh lemon juice (or balsamic vinegar)
    4. 1 teaspoon Dijon mustard
    5. 1/4 teaspoon salt
    6. 1/4 teaspoon black pepper

Instructions

  • Prepare the Dressing – In a small bowl or jar, whisk together olive oil, honey, lemon juice, Dijon mustard, salt, and pepper until smooth. Set aside.
  • Toast the Nuts – In a dry skillet over medium heat, toast the almonds or pecans for 2-3 minutes, stirring frequently until golden and fragrant. Let them cool.
  • Assemble the Salad – In a large bowl, layer mixed greens, sliced peaches, blueberries, crumbled feta, and red onion.
  • Drizzle & Toss – Pour the dressing over the salad and gently toss to coat.
  • Garnish & Serve – Top with toasted nuts and fresh basil/mint for an extra burst of flavor. Serve immediately!

Notes

  • If you prefer a sweeter dressing, you can increase the amount of honey.
  • You can substitute the honey with maple syrup for a vegan option.
  • The salad can be made ahead, but it’s best to add the dressing just before serving to keep the greens crisp.
