- 2 naan flatbreads
- 1 teaspoon olive oil
- 1 cup thinly sliced red onion
- Kosher salt, to taste
- Pinch of red pepper flakes
- 2 tablespoons honey
- 1/2 cup ricotta cheese
- 1/2 cup feta cheese
- 1 cup blueberries
- Micro arugula or baby arugula, for garnish
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the naan flatbreads on the sheet and lightly brush or spray them with water. Set aside.
- Caramelize the Onions: Heat olive oil in a pan over medium-low heat. Add the sliced red onion and season with a pinch of kosher salt and red pepper flakes. Cook for 3-5 minutes until softened. Stir in the honey and let the onions caramelize for another 5 minutes, stirring occasionally. Remove from heat.
- Prepare the Cheese Mixture: In a small bowl, combine ricotta cheese and feta cheese. Stir until smooth and well-mixed.
- Assemble the Pizza: Spread the cheese mixture evenly over each naan. Top with the honey-caramelized onions and scatter the blueberries over the top.
- Bake: Place the naan pizzas in the oven and bake for about 10 minutes, or until the cheese is softened, the blueberries begin to burst, and the naan is toasted.
- Finish and Serve: Remove from the oven, sprinkle with fresh arugula, and serve immediately.
Notes
- You can use other soft cheeses like goat cheese or cream cheese instead of ricotta for a different flavor.
- For a more intense caramelized onion flavor, cook the onions on low heat for a longer time.
- If you like a bit of heat, feel free to add extra red pepper flakes.
