Ingredients

Scale

For Madeleine Batter

  • 4 oz butter
  • ⅔ cup granulated sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tbsp lemon juice
  • 3 tbsp lemon zest

For Cherry Sauce

  • ¼ cup water
  • 1 tbsp lemon juice
  • 1 tbsp granulated sugar
  • Pinch of salt
  • 2 tbsp cornstarch
  • 2 cups cherries, pitted and chopped

For Blueberry Sauce

  • 2 cups blueberries, chopped
  • ¼ cup water
  • 1 tbsp lemon juice
  • 1 tbsp granulated sugar
  • Pinch of salt
  • 2 tbsp cornstarch

Instructions

  1. Melt the butter and set aside to cool slightly.
  2. In a bowl, whisk together eggs and sugar until pale and fluffy.
  3. Stir in vanilla extract, lemon juice, and lemon zest.
  4. Gently fold in the flour and salt, then slowly mix in the melted butter until the batter is smooth.
  5. For each fruit sauce, combine water, lemon juice, sugar, salt, and cornstarch in separate saucepans.
  6. Add the chopped cherries to one and the chopped blueberries to the other. Cook both over medium heat, stirring constantly, until thickened. Set aside to cool.
  7. Preheat oven to 375°F (190°C) and grease madeleine molds.
  8. Spoon madeleine batter into molds, filling about ¾ full.
  9. Drop small spoonfuls of the fruit sauces onto the batter and swirl gently with a toothpick.
  10. Bake for 10–12 minutes or until edges are golden and madeleines spring back when lightly touched.
  11. Remove from molds and cool on a wire rack before serving.

Notes

  • Use fresh or frozen fruit — just thaw and drain frozen cherries and blueberries before using.
  • To enhance citrus flavor, add a few drops of lemon extract to the batter.
  • Dust with powdered sugar for a lovely finish.
