Ingredients

  1. 4 salmon fillets (6 oz each, skinless)
  2. 2 cups fresh spinach
  3. 1/2 cup cream cheese, softened
  4. 1/3 cup grated Parmesan cheese
  5. 2 cloves garlic, minced
  6. 1 tablespoon olive oil
  7. 1 teaspoon paprika
  8. 1/2 teaspoon garlic powder
  9. 1/2 teaspoon onion powder
  10. 1/2 teaspoon black pepper
  11. Salt to taste
  12. Lemon wedges for serving

Instructions

  • Prepare the Spinach Filling:

    • Cook the spinach in a skillet over medium heat until wilted. Drain off excess liquid.
    • In a bowl, combine the cooked spinach, cream cheese, Parmesan cheese, garlic, and season with salt and pepper. Mix well.
  • Prepare the Salmon:

    • Create a pocket in each salmon fillet by slicing horizontally, being careful not to cut all the way through.
    • Stuff the pockets with the spinach and cheese mixture.
  • Season the Salmon:

    • In a small bowl, combine the paprika, garlic powder, onion powder, black pepper, and salt.
    • Rub the seasoning mixture over the tops of the salmon fillets.
  • Cook the Salmon:

    • Heat olive oil in a skillet over medium-high heat.
    • Sear the salmon fillets for 2-3 minutes per side, or until the tops are blackened and crispy.
    • Transfer the salmon to a preheated oven (350°F or 175°C) and bake for 10-12 minutes, or until cooked through.
  • Serve:

    • Serve the blackened salmon stuffed with spinach and Parmesan cheese with lemon wedges.
