A fresh and vibrant salad with a delightful mix of spinach, strawberries, blueberries, crumbled feta, and toasted pecans. Topped with a sweet and tangy balsamic glaze, this salad is perfect for a light lunch or a refreshing side dish at any meal.

    1. 6 cups fresh spinach leaves
    2. 1 cup fresh strawberries (sliced)
    3. 1 cup fresh blueberries
    4. 1/2 cup crumbled feta cheese
    5. 1/2 cup pecans (toasted)
    6. 1/4 cup red onion (thinly sliced)

For the Balsamic Glaze:

    • 1/2 cup balsamic vinegar
    • 2 tbsp honey (optional)

Instructions

  • In a large bowl, combine the spinach, strawberries, blueberries, red onion, and toasted pecans.
  • Sprinkle the crumbled feta cheese on top.
  • For the balsamic glaze, heat balsamic vinegar in a small saucepan over medium heat. Simmer until the vinegar reduces by half and thickens. Stir in honey, if using, and let it cool.
  • Drizzle the balsamic glaze over the salad just before serving.

Notes

  • Toasting the pecans enhances their flavor, but if you’re in a hurry, you can skip this step.
  • For extra flavor, you can add a pinch of salt and pepper to the salad before serving.
