Description

A simple and delicious blackberry cobbler made with pantry staples and topped with juicy berries and a crisp golden crust, perfect with vanilla ice cream.


Ingredients

Scale
  • 1 ¼ cups + 2 tbsp sugar, separated
  • 1 cup self-rising flour
  • 1 cup milk (whole is best)
  • ½ stick butter, melted (4 tbsp)
  • 2 cups fresh or frozen blackberries, rinsed and patted dry
  • Vanilla ice cream, for serving

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine 1 cup of sugar with the flour.
  3. Stir in milk, then melted butter, and mix until well combined.
  4. Pour the mixture into a greased 9×9 inch baking dish.
  5. Distribute the blackberries on top (they will sink in as they bake).
  6. Sprinkle ¼ cup sugar over the top, reserving 2 tbsp for later.
  7. Bake for 50 minutes.
  8. Remove from the oven and sprinkle the remaining 2 tbsp sugar on top.
  9. Bake for an additional 10 minutes, or until the top is golden brown.
  10. Serve immediately with vanilla ice cream.

Notes

  • For homemade self-rising flour: mix 1 cup all-purpose flour with 1½ tsp baking powder and ¼ tsp salt.
  • Use whole milk for a richer flavor.
  • Frozen blackberries can be used, but thaw and drain them first to reduce excess liquid.
  • Serve cobbler warm for the best experience.
