Description
A simple and delicious blackberry cobbler made with pantry staples and topped with juicy berries and a crisp golden crust, perfect with vanilla ice cream.

- 1 ¼ cups + 2 tbsp sugar, separated
- 1 cup self-rising flour
- 1 cup milk (whole is best)
- ½ stick butter, melted (4 tbsp)
- 2 cups fresh or frozen blackberries, rinsed and patted dry
- Vanilla ice cream, for serving
Instructions
- Preheat oven to 350°F.
- In a large bowl, combine 1 cup of sugar with the flour.
- Stir in milk, then melted butter, and mix until well combined.
- Pour the mixture into a greased 9×9 inch baking dish.
- Distribute the blackberries on top (they will sink in as they bake).
- Sprinkle ¼ cup sugar over the top, reserving 2 tbsp for later.
- Bake for 50 minutes.
- Remove from the oven and sprinkle the remaining 2 tbsp sugar on top.
- Bake for an additional 10 minutes, or until the top is golden brown.
- Serve immediately with vanilla ice cream.
Notes
- For homemade self-rising flour: mix 1 cup all-purpose flour with 1½ tsp baking powder and ¼ tsp salt.
- Use whole milk for a richer flavor.
- Frozen blackberries can be used, but thaw and drain them first to reduce excess liquid.
- Serve cobbler warm for the best experience.
