For the Soup:
1 lb beef sirloin, thinly sliced
2 carrots, peeled and sliced
1 daikon radish, peeled and sliced
1 onion, chopped
2 cloves garlic, minced
6 cups beef broth
1 tsp salt
1/2 tsp black pepper
1/4 cup chopped cilantro
Instructions
Sauté: In a large pot, sauté onion and garlic over medium heat until fragrant, about 2 minutes.
Add Broth: Pour in the beef broth and bring to a boil.
Simmer: Add the carrots and daikon radish. Reduce heat to low and simmer for 15 minutes, or until vegetables are tender.
Add Beef: Add the sliced beef to the pot and cook for an additional 2-3 minutes until the beef is just cooked through.
Season: Season with salt and pepper to taste.
Garnish and Serve: Garnish with freshly chopped cilantro and serve hot.
Notes
Feel free to substitute the daikon radish with regular radishes if needed.
If you prefer a richer flavor, add a splash of soy sauce or Worcestershire sauce to taste.
