For the Soup:
- 1 lb beef sirloin, thinly sliced
- 2 carrots, peeled and sliced
- 1 daikon radish, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped cilantro
Instructions
- Sauté: In a large pot, sauté onion and garlic over medium heat until fragrant, about 2 minutes.
- Add Broth: Pour in the beef broth and bring to a boil.
- Simmer: Add the carrots and daikon radish. Reduce heat to low and simmer for 15 minutes, or until vegetables are tender.
- Add Beef: Add the sliced beef to the pot and cook for an additional 2-3 minutes until the beef is just cooked through.
- Season: Season with salt and pepper to taste.
- Garnish and Serve: Garnish with freshly chopped cilantro and serve hot.
Notes
- Feel free to substitute the daikon radish with regular radishes if needed.
- If you prefer a richer flavor, add a splash of soy sauce or Worcestershire sauce to taste.
