Ingredients
-
For the Main Dish:
- 1 lb beef smoked sausage, sliced into rounds
- 1 tbsp olive oil
- 1 small onion, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp black pepper
- ½ tsp salt
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- ½ tsp red pepper flakes (optional for heat)
For the Rice:
- 1 cup long-grain white rice
- 2 cups water or chicken broth
- ½ tsp salt
- 1 tbsp butter
Instructions
-
Prepare the Rice:
In a medium saucepan, bring water (or chicken broth) to a boil.
Add rice, salt, and butter. Reduce heat to low, cover, and simmer for 15 minutes, or until the liquid is absorbed.
Remove from heat and let sit covered for 5 minutes before fluffing with a fork. -
Cook the Sausage & Vegetables:
Heat olive oil in a large skillet over medium-high heat.
Add sliced smoked sausage and cook for 4-5 minutes until browned. Remove and set aside.
In the same skillet, add sliced onions and bell peppers. Sauté for 3-4 minutes until slightly softened.
Add minced garlic, smoked paprika, salt, black pepper, Worcestershire sauce, soy sauce, and red pepper flakes (if using). Stir to combine. -
Combine & Serve:
Return the smoked sausage to the skillet and stir everything together. Cook for another 2-3 minutes until heated through.
Serve the sausage and vegetable mixture over warm, fluffy rice and enjoy!
Notes
- Optional Heat: If you prefer a spicier dish, add more red pepper flakes or a dash of hot sauce to taste.
- Broth vs. Water: Using chicken broth in the rice will give it an extra depth of flavor, but water works perfectly too.
- Serving Suggestion: This dish pairs wonderfully with a side of steamed vegetables or a simple green salad.
