  • 2 cups milk
  • 1 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions (9-11 minutes) until al dente. Reserve 1 cup of pasta water before draining.
  • Brown the Beef:
    In a large skillet, heat the olive oil or butter over medium-high heat. Add the ground beef and break it up with a spatula. Cook for 5-7 minutes until browned and cooked through. Drain excess fat and set aside.
  • Sauté the Garlic:
    Add the minced garlic to the skillet and cook over medium heat for 1 minute, stirring constantly, until fragrant. Be careful not to burn the garlic.
  • Create the Sauce:
    Sprinkle the flour over the beef and garlic mixture and stir to combine. Gradually add the milk, stirring continuously to avoid lumps. Bring to a simmer and cook for 2-3 minutes until the sauce thickens.
  • Add Cheese and Seasoning:
    Stir in the grated Parmesan cheese, Italian seasoning, salt, and pepper. Continue cooking for 1-2 minutes until the cheese melts and the sauce is creamy.
  • Combine Pasta and Sauce:
    Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add reserved pasta water, one tablespoon at a time, until desired consistency is reached.
  • Garnish and Serve:
    Garnish with freshly chopped parsley and serve immediately. Enjoy your creamy, flavorful dish!

  • For a lighter version, you can substitute ground turkey or chicken for the beef.
