  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted

  • For the banana filling:
  • ¾ cup granulated sugar
  • ⅓ cup all-purpose flour
  • ¼ tsp salt
  • 2 cups whole milk
  • 3 large egg yolks
  • 2 tbsp unsalted butter
  • 1 ½ tsp vanilla extract
  • 3 ripe bananas, sliced
  • For the whipped topping:
  • 1 cup heavy whipping cream
  • 3 tbsp powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter until the texture resembles wet sand.
  2. Press mixture evenly into a 9-inch pie pan. Bake for 8–10 minutes until golden. Let cool completely.
  3. In a medium saucepan, whisk together sugar, flour, and salt. Gradually whisk in milk over medium heat until smooth. Stir constantly until thick and bubbling, about 6–8 minutes.
  4. Whisk egg yolks in a separate bowl. Slowly add a bit of the hot milk mixture to temper, whisking constantly. Pour yolk mixture back into saucepan and cook for 2–3 minutes until thickened.
  5. Remove from heat and stir in butter and vanilla until smooth.
  6. Arrange sliced bananas on the cooled crust. Pour warm custard over the bananas and spread evenly. Cool at room temp for 15–20 minutes, then refrigerate for at least 4 hours or overnight.
  7. Beat cold heavy cream, powdered sugar, and vanilla in a mixing bowl until soft peaks form. Spread or pipe over the chilled pie.
  8. Garnish with extra bananas, graham cracker crumbs, or caramel drizzle if desired. Slice and serve cold.

Notes

  • Use bananas that are ripe but not overly mushy for best texture.
  • Make the crust and custard a day ahead for easy assembly.
  • Top just before serving to keep whipped cream fresh.
