- ⅓ cup all-purpose flour
- ¼ tsp salt
- 2 cups whole milk
- 3 large egg yolks
- 2 tbsp unsalted butter
- 1 ½ tsp vanilla extract
- 3 ripe bananas, sliced
- For the whipped topping:
- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
- ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter until the texture resembles wet sand.
- Press mixture evenly into a 9-inch pie pan. Bake for 8–10 minutes until golden. Let cool completely.
- In a medium saucepan, whisk together sugar, flour, and salt. Gradually whisk in milk over medium heat until smooth. Stir constantly until thick and bubbling, about 6–8 minutes.
- Whisk egg yolks in a separate bowl. Slowly add a bit of the hot milk mixture to temper, whisking constantly. Pour yolk mixture back into saucepan and cook for 2–3 minutes until thickened.
- Remove from heat and stir in butter and vanilla until smooth.
- Arrange sliced bananas on the cooled crust. Pour warm custard over the bananas and spread evenly. Cool at room temp for 15–20 minutes, then refrigerate for at least 4 hours or overnight.
- Beat cold heavy cream, powdered sugar, and vanilla in a mixing bowl until soft peaks form. Spread or pipe over the chilled pie.
- Garnish with extra bananas, graham cracker crumbs, or caramel drizzle if desired. Slice and serve cold.

- Use bananas that are ripe but not overly mushy for best texture.
- Make the crust and custard a day ahead for easy assembly.
- Top just before serving to keep whipped cream fresh.
