This Baked Potato Chicken Broccoli Casserole is the ultimate cozy, indulgent comfort food! Loaded with fluffy potatoes, tender chicken, crisp bacon, and gooey cheese, this make-ahead meal is a guaranteed crowd-pleaser. Perfect for busy nights or family gatherings

Ingredients

  1. 3 lbs red potatoes, cut into 1-inch pieces

  2. 4 tbsp butter, room temperature

  3. 1 cup sour cream

  4. ½1 tsp kosher salt

  5. ½ tsp black pepper

  6. ½ tsp garlic powder

  7. ½ tsp paprika

  8. 1 medium head broccoli, cut into florets (23 cups)

  9. 3 cups cooked, chopped chicken

  10. 4 slices cooked bacon, crumbled

  11. 2 cups shredded cheese (cheddar, Mexican blend, etc.), divided

Instructions

  • Preheat & Prep: Preheat the oven to 350°F (175°C). Grease a 2-quart baking dish.

  • Cook the Potatoes: Boil the potato pieces in salted water until fork-tender, about 10-15 minutes. Drain and return them to the pot.

  • Prepare the Broccoli & Bacon: While the potatoes cook, steam or roast the broccoli until crisp-tender. Cook the bacon until crispy, then crumble it.

  • Mash the Potatoes: Mash the drained potatoes over low heat. Mix in butter, sour cream, salt, pepper, garlic powder, and paprika until fluffy.

  • Assemble the Casserole: Stir in the broccoli, chicken, bacon, and 1 cup of shredded cheese. Transfer the mixture to the prepared baking dish. Top with the remaining 1 cup of cheese.

 

  • Bake & Serve: Bake for 20-25 minutes until hot and melty in the center. Let cool for 5 minutes before serving. Enjoy!

Notes

  • This casserole can be made ahead of time and stored in the fridge until you’re ready to bake it. Just increase the baking time slightly if baking from cold.

  • You can substitute the broccoli for another vegetable like cauliflower or green beans if desired.

 

  • For extra flavor, try adding chopped onions or garlic to the casserole mixture.
