3 lbs red potatoes, cut into 1-inch pieces

4 tbsp butter, room temperature

1 cup sour cream

½–1 tsp kosher salt

½ tsp black pepper

½ tsp garlic powder

½ tsp paprika

1 medium head broccoli, cut into florets (2–3 cups)

3 cups cooked, chopped chicken

4 slices cooked bacon, crumbled

2 cups shredded cheese (cheddar, Mexican blend, etc.), divided
Instructions

Preheat & Prep: Preheat the oven to 350°F (175°C). Grease a 2-quart baking dish.

Cook the Potatoes: Boil the potato pieces in salted water until fork-tender, about 10-15 minutes. Drain and return them to the pot.

Prepare the Broccoli & Bacon: While the potatoes cook, steam or roast the broccoli until crisp-tender. Cook the bacon until crispy, then crumble it.

Mash the Potatoes: Mash the drained potatoes over low heat. Mix in butter, sour cream, salt, pepper, garlic powder, and paprika until fluffy.

Assemble the Casserole: Stir in the broccoli, chicken, bacon, and 1 cup of shredded cheese. Transfer the mixture to the prepared baking dish. Top with the remaining 1 cup of cheese.
