3 lbs red potatoes, cut into 1-inch pieces
4 tbsp butter, room temperature
1 cup sour cream
½–1 tsp kosher salt
½ tsp black pepper
½ tsp garlic powder
½ tsp paprika
1 medium head broccoli, cut into florets (2–3 cups)
3 cups cooked, chopped chicken
4 slices cooked bacon, crumbled
2 cups shredded cheese (cheddar, Mexican blend, etc.), divided
Preheat & Prep: Preheat the oven to 350°F (175°C). Grease a 2-quart baking dish.
Cook the Potatoes: Boil the potato pieces in salted water until fork-tender, about 10-15 minutes. Drain and return them to the pot.
Prepare the Broccoli & Bacon: While the potatoes cook, steam or roast the broccoli until crisp-tender. Cook the bacon until crispy, then crumble it.
Mash the Potatoes: Mash the drained potatoes over low heat. Mix in butter, sour cream, salt, pepper, garlic powder, and paprika until fluffy.
Assemble the Casserole: Stir in the broccoli, chicken, bacon, and 1 cup of shredded cheese. Transfer the mixture to the prepared baking dish. Top with the remaining 1 cup of cheese.
Bake & Serve: Bake for 20-25 minutes until hot and melty in the center. Let cool for 5 minutes before serving. Enjoy!
This casserole can be made ahead of time and stored in the fridge until you’re ready to bake it. Just increase the baking time slightly if baking from cold.
You can substitute the broccoli for another vegetable like cauliflower or green beans if desired.
For extra flavor, try adding chopped onions or garlic to the casserole mixture.
