  1. 4 cod fillets
  2. 1 pint cherry tomatoes, halved
  3. 3 cloves garlic, minced
  4. 1/4 cup olive oil
  5. 1/2 lemon, juiced
  6. 1 tsp dried oregano
  7. 1/2 tsp dried thyme
  8. 1/2 tsp salt
  9. 1/2 tsp black pepper
  10. 1/4 tsp red pepper flakes (optional)
  11. 1/4 cup kalamata olives, sliced
  12. 2 tbsp capers
  13. 2 tbsp fresh parsley, chopped

Instructions

  • Preheat oven to 400°F (200°C).
  • Arrange cod fillets in a baking dish.
  • In a bowl, mix cherry tomatoes, garlic, olive oil, lemon juice, oregano, thyme, salt, black pepper, and red pepper flakes.
  • Pour tomato mixture over the cod fillets. Add olives and capers on top.
  • Bake for 15-20 minutes, until the cod is flaky.

 

  • Garnish with fresh parsley and serve warm.

Notes

  • If you prefer a spicier dish, increase the amount of red pepper flakes.
