A hearty and flavorful Mexican-inspired casserole made with ground beef, refried beans, and melted cheese, perfect for a family dinner.

- 1 pound ground beef
- 1 small onion, chopped
- 1 pack taco seasoning
- 1 can refried beans
- 1 can cream of mushroom soup, undiluted
- 1/2 cup sour cream
- 1 pack large flour tortillas
- 2 1/2 cups shredded Mexican blend cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook ground beef and chopped onion until the beef is no longer pink; drain any excess fat.
- Stir in taco seasoning and refried beans, and heat through.
- In a separate bowl, blend cream of mushroom soup with sour cream until smooth.
- Spread half of the soup mixture in the bottom of a baking dish.
- Place a layer of tortillas over the soup mixture, tearing them to fit the dish.
- Layer half of the beef mixture over the tortillas and sprinkle with about 1 cup of shredded Mexican blend cheese.
- Repeat the layers, ending with a layer of cheese on top.
- Bake for 20 minutes or until the cheese is melted and bubbly.
Notes
- Feel free to use ground turkey or chicken as a lighter alternative to beef.
- For extra heat, add sliced jalapeños or use a spicy taco seasoning mix.
- Serve with a side of Mexican rice or a fresh salad for a complete meal.
