- 8 oz bowtie pasta (farfalle)
- 2 ripe avocados, diced

- 1/4 cup fresh cilantro, chopped
For the Dressing:
- 1 avocado, mashed
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 clove garlic, minced
- 1/2 tsp ground cumin
- Salt and pepper, to taste
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook the bowtie pasta according to package instructions until al dente.
- Drain, rinse with cold water, and set aside to cool.
- Prepare the Dressing:
- In a small bowl, mash 1 avocado until smooth.
- Whisk in olive oil, lime juice, minced garlic, and ground cumin.
- Season with salt and pepper to taste.
- Assemble the Salad:
- In a large mixing bowl, combine the cooled pasta, diced avocados, cherry tomatoes, red onion, cucumber, and corn.
- Drizzle the creamy avocado dressing over the salad.
- Gently toss to coat all ingredients evenly.
- Garnish and Serve:
- Sprinkle fresh cilantro on top for a burst of flavor.
- Serve immediately or chill for 30 minutes to let the flavors meld together.
