    • 8 oz bowtie pasta (farfalle)
    • 2 ripe avocados, diced
    • 1 cup cherry tomatoes, halved
    • 1/2 cup red onion, finely diced
    • 1/2 cup cucumber, diced
    • 1/2 cup corn (cooked and cooled)
    • 1/4 cup fresh cilantro, chopped

    For the Dressing:

    • 1 avocado, mashed
    • 2 tbsp olive oil
    • 2 tbsp lime juice
    • 1 clove garlic, minced
    • 1/2 tsp ground cumin
    • Salt and pepper, to taste

Instructions

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the bowtie pasta according to package instructions until al dente.
    • Drain, rinse with cold water, and set aside to cool.
  • Prepare the Dressing:
    • In a small bowl, mash 1 avocado until smooth.
    • Whisk in olive oil, lime juice, minced garlic, and ground cumin.
    • Season with salt and pepper to taste.
  • Assemble the Salad:
    • In a large mixing bowl, combine the cooled pasta, diced avocados, cherry tomatoes, red onion, cucumber, and corn.
    • Drizzle the creamy avocado dressing over the salad.
    • Gently toss to coat all ingredients evenly.
  • Garnish and Serve:
    • Sprinkle fresh cilantro on top for a burst of flavor.
    • Serve immediately or chill for 30 minutes to let the flavors meld together.
