  1. 4 large yellow onions, peeled and sliced into 1⁄4-inch rounds
  2. Olive oil, for drizzling
  3. 1⁄2 teaspoon fresh thyme, chopped
  4. Salt and pepper, to taste
  5. 1 cup heavy cream
  6. 2 teaspoons Dijon mustard
  7. 1⁄2 cup Asiago cheese, grated

Instructions

  • Preheat your oven to 450°F (230°C). Grease a baking dish and arrange the onion slices in a single, even layer at the bottom.
  • Drizzle the onion slices with olive oil and season with chopped thyme, salt, and pepper. Roast the onions in the oven for 20 minutes, or until they become soft and begin to caramelize.
  • While the onions are roasting, heat the heavy cream in a small saucepan over medium heat until it reaches a simmer. Stir in the Dijon mustard and half of the grated Asiago cheese, allowing it to melt into the sauce.
  • Once the onions have finished roasting, pour the creamy mixture evenly over them. Top with the remaining Asiago cheese, cover the dish with foil, and return it to the oven. Bake for an additional 20 minutes, or until the onions are tender, the cheese has melted, and the sauce is bubbling at the edges.
