- For the Cake:
- 2 cups all-purpose flour
- 2 cups sugar
- 1 1/2 cups applesauce
- 1/2 cup butter, softened
- 2 eggs
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground allspice
- 3/4 cup golden raisins or raisins
- 1/2 cup chopped pecans
For the Frosting:
- 1/3 cup butter
- 3 cups powdered sugar
- 1 1/2 teaspoons vanilla extract
- 2 to 3 tablespoons milk
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine all cake ingredients (except raisins and pecans). Beat at low speed until the ingredients are moistened, then increase speed and beat at high until smooth.
- Stir in the raisins and 1/2 cup of chopped pecans.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
- For the Frosting: In a saucepan, melt 1/3 cup butter over medium heat. Stir constantly and cook for 4-6 minutes, until the butter just begins to turn golden brown. Remove from heat and let cool completely.
- In a medium bowl, combine the browned butter, powdered sugar, and vanilla. Beat at medium speed, gradually adding milk until smooth and spreadable.
- Frost the cooled cake with the frosting, and optionally sprinkle with the remaining chopped pecans.
Notes
- This cake pairs wonderfully with coffee or tea.
- For a richer frosting, you can add an extra tablespoon of milk to achieve the desired consistency.
