Description

These Apple Cinnamon Raisin Scones are a cozy breakfast favorite—flaky, buttery, and packed with sweet apples, oats, and juicy raisins. With a hint of cinnamon spice and a light yogurt base, they make a semi-healthy indulgence for brunch, afternoon tea, or coffee breaks.


Ingredients

  • 1½ cups flour
  • ¾ cup regular rolled oats
  • ¼ cup brown sugar
  • 1 tablespoon baking powder
  • 2 teaspoons cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons cold butter, chopped
  • 1 egg
  • ½ cup plain yogurt
  • 2 cups apple, finely chopped (about apples)
  • ½ cup raisins
  • ½ teaspoon cinnamon (for topping)
  • 1 teaspoon sugar (for topping)
  • ¼ cup powdered sugar (for icing)
  • 1 tablespoon milk (for icing)

Instructions

  1. Preheat oven to 400℉ (200℃).
  2. In a large bowl, whisk together flour, oats, brown sugar, baking powder, cinnamon, and salt.
  3. Add the cold chopped butter and use a pastry cutter, fork, or your hands to incorporate it until the butter pieces are pea-sized or smaller.
  4. Add the egg, yogurt, chopped apple, and raisins. Mix well with a spatula, then knead lightly by hand to bring the dough together.
  5. Turn dough onto a floured parchment-lined baking sheet. Divide in half and shape each into a round disk. Cut each into 8 wedges, but don’t separate them completely.
  6. Mix the cinnamon and sugar topping, and sprinkle evenly over both disks.
  7. Bake for 25 minutes. Allow to cool for 15 minutes before slicing through the wedges.
  8. Mix icing ingredients and drizzle over cooled scones. Serve warm or at room temperature.

Notes

  • For a lighter version, you can substitute half of the butter with applesauce or Greek yogurt.
  • If you prefer a sweeter topping, feel free to add more sugar or drizzle extra icing on top.
  • These scones can be frozen for up to 3 months. Just make sure to wrap them tightly in plastic wrap and foil before freezing.
