This Apple Cider Cheesecake combines the rich, creamy texture of cheesecake with the sweet and spicy flavors of apple cider, cinnamon, and nutmeg. A perfect fall dessert!

  1. For the Crust
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, melted
    • 1 teaspoon ground cinnamon

    For the Cheesecake Filling

    • 16 oz cream cheese, softened
    • 1 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 3 large eggs
    • 1 cup apple cider
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 2 tablespoons all-purpose flour

    For the Topping

    1. 2 cups diced apples (peeled and cored)
    2. 2 tablespoons brown sugar
    3. 1 teaspoon ground cinnamon
    4. 1 tablespoon lemon juice
    5. Optional: whipped cream for serving

Instructions

  • Make the Crust
    • Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
    • Combine Crust Ingredients: In a mixing bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and ground cinnamon. Mix until well combined.
    • Press into Pan: Press the mixture firmly into the bottom of the springform pan to form an even layer. Bake for 8-10 minutes, then remove and let cool.
  • Make the Cheesecake Filling
    • Beat Cream Cheese: In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    • Add Sugar and Vanilla: Gradually add the granulated sugar and vanilla extract, mixing until well combined.
    • Add Eggs: Add the eggs one at a time, mixing well after each addition.
    • Incorporate Apple Cider and Spices: Stir in the apple cider, ground cinnamon, ground nutmeg, and flour until smooth.
  • Assemble the Cheesecake
    • Pour Filling Over Crust: Pour the cheesecake filling over the cooled crust, spreading it evenly.
    • Bake: Bake for 55-60 minutes, or until the center is set but slightly jiggles. Turn off the oven and leave the cheesecake inside for another hour to cool gradually.
    • Cool: Remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight for the best texture.
  • Topping
    • Prepare Topping: In a bowl, toss the diced apples with brown sugar, cinnamon, and lemon juice.
    • Serve: Before serving, top the cheesecake with the spiced apples and a dollop of whipped cream, if desired.

Notes

  • For a more decadent cheesecake, consider adding a caramel drizzle or extra cinnamon to the topping.

  • The topping can also be made with pears for a different flavor twist.
