- 1 teaspoon vanilla extract
- 3 large eggs

- 2 tablespoons all-purpose flour

- 2 cups diced apples (peeled and cored)
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice

Instructions
- Make the Crust
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
- Combine Crust Ingredients: In a mixing bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and ground cinnamon. Mix until well combined.
- Press into Pan: Press the mixture firmly into the bottom of the springform pan to form an even layer. Bake for 8-10 minutes, then remove and let cool.
- Make the Cheesecake Filling
- Beat Cream Cheese: In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add Sugar and Vanilla: Gradually add the granulated sugar and vanilla extract, mixing until well combined.
- Add Eggs: Add the eggs one at a time, mixing well after each addition.
- Incorporate Apple Cider and Spices: Stir in the apple cider, ground cinnamon, ground nutmeg, and flour until smooth.
- Assemble the Cheesecake
- Pour Filling Over Crust: Pour the cheesecake filling over the cooled crust, spreading it evenly.
- Bake: Bake for 55-60 minutes, or until the center is set but slightly jiggles. Turn off the oven and leave the cheesecake inside for another hour to cool gradually.
- Cool: Remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight for the best texture.
- Topping
- Prepare Topping: In a bowl, toss the diced apples with brown sugar, cinnamon, and lemon juice.
- Serve: Before serving, top the cheesecake with the spiced apples and a dollop of whipped cream, if desired.

- For a more decadent cheesecake, consider adding a caramel drizzle or extra cinnamon to the topping.
