Description
This Amazing Forgotten Chicken is a simple, one-pan dinner made with juicy chicken, creamy rice, and a savory blend of flavors. The best part? You just assemble it, forget about it, and let the oven do the work! Perfect for busy nights and family dinners
Ingredients
-
4 boneless, skinless chicken breasts (or thighs)
-
1 cup (190g) uncooked long-grain white rice
-
1 (10.5 oz) can cream of chicken soup (or mushroom for variation)
-
1 (10.5 oz) can water (use the soup can to measure)
-
1 (1 oz) packet dry onion soup mix (or ranch seasoning for a twist!)
-
½ cup (120ml) milk (or broth for extra flavor)
-
1 tsp garlic powder
-
½ tsp paprika (for color)
-
Salt & pepper to taste
-
Optional Add-Ins:
-
1 cup frozen peas & carrots (for veggies!)
-
Shredded cheese (for topping)
-
Instructions
-
Preheat oven to 350°F (175°C).
-
In a 9×13-inch baking dish, spread uncooked rice evenly.
-
Place chicken breasts on top of the rice.
-
In a bowl, whisk together soup, water, milk, onion soup mix, garlic powder, and paprika. Pour this mixture over the chicken.
-
Sprinkle with pepper (salt is in the soup mix, so taste first!).
-
Cover the baking dish tightly with foil and bake for 1 hour.
-
After 1 hour, uncover and bake for an additional 15-20 minutes, or until the chicken is golden and the rice is tender.
-
Let the dish rest for 5 minutes. Fluff the rice and serve.
Notes
-
Pro Tip: Use a meat thermometer to ensure the chicken is fully cooked; the safe internal temperature is 165°F (74°C).
-
You can swap out the seasoning and try Italian dressing mix or taco seasoning for a different flavor.
-
Add shredded cheddar cheese during the last 10 minutes of baking for a cheesy topping.
-
This recipe can be stored in the fridge for up to 3 days and reheats well with a splash of broth or milk.
