Description

This Amazing Forgotten Chicken is a simple, one-pan dinner made with juicy chicken, creamy rice, and a savory blend of flavors. The best part? You just assemble it, forget about it, and let the oven do the work! Perfect for busy nights and family dinners


Ingredients

  1. 4 boneless, skinless chicken breasts (or thighs)

  2. 1 cup (190g) uncooked long-grain white rice

  3. 1 (10.5 oz) can cream of chicken soup (or mushroom for variation)

  4. 1 (10.5 oz) can water (use the soup can to measure)

  5. 1 (1 oz) packet dry onion soup mix (or ranch seasoning for a twist!)

  6. ½ cup (120ml) milk (or broth for extra flavor)

  7. 1 tsp garlic powder

  8. ½ tsp paprika (for color)

  9. Salt & pepper to taste

  10. Optional Add-Ins:

    • 1 cup frozen peas & carrots (for veggies!)

    • Shredded cheese (for topping)


Instructions

  • Preheat oven to 350°F (175°C).

  • In a 9×13-inch baking dish, spread uncooked rice evenly.

  • Place chicken breasts on top of the rice.

  • In a bowl, whisk together soup, water, milk, onion soup mix, garlic powder, and paprika. Pour this mixture over the chicken.

  • Sprinkle with pepper (salt is in the soup mix, so taste first!).

  • Cover the baking dish tightly with foil and bake for 1 hour.

  • After 1 hour, uncover and bake for an additional 15-20 minutes, or until the chicken is golden and the rice is tender.

 

  • Let the dish rest for 5 minutes. Fluff the rice and serve.


Notes

  • Pro Tip: Use a meat thermometer to ensure the chicken is fully cooked; the safe internal temperature is 165°F (74°C).

  • You can swap out the seasoning and try Italian dressing mix or taco seasoning for a different flavor.

  • Add shredded cheddar cheese during the last 10 minutes of baking for a cheesy topping.
