This sweet and salty Addicting Toffee Chex Mix is a crowd-pleaser that’s perfect for any party or snacking occasion! A crunchy mix of Chex cereal, assorted nuts, pretzels, and a buttery toffee coating that will have you reaching for more.

  1. 12.8 oz box Rice or Corn Chex Cereal
  2. 3 cups assorted nuts (pecans, almonds, peanuts, etc.)
  3. 3 cups pretzel thins (or mini knots)
  4. 1 cup unsalted butter
  5. 2 cups dark brown sugar
  6. 3/4 cup light corn syrup
  7. 1 tsp salt
  8. 2 tsp pure vanilla extract
  9. 1 tsp baking soda

Instructions

  • Preheat your oven to 250°F and position 2 racks near the center. Line 2 baking sheets with aluminum foil and spray generously with cooking spray.
  • In a large mixing bowl, combine the Chex cereal, assorted nuts, and pretzels. Set aside.
  • In a large saucepan, melt the butter over medium heat. Once melted, add the brown sugar, corn syrup, and salt. Stir frequently and bring to a boil.
  • Let the mixture boil for 2 minutes, then remove from heat.
  • Stir in the vanilla extract and then add the baking soda, mixing thoroughly. The toffee will foam up—keep stirring until it’s fully combined.
  • Pour the hot toffee over the cereal, nuts, and pretzels, gently folding to coat everything evenly. Be careful, as the toffee is very hot.
  • Divide the mixture between the two baking sheets and spread evenly. Bake for 30–55 minutes, stirring every 15 minutes. Bake for 30 minutes for chewier toffee, or 55 minutes for crispier toffee.
  • Remove from the oven and stir until the mix cools enough to stay separate. Transfer to a bowl and enjoy!

Notes

  • The longer you bake, the crispier the toffee will be. For chewier toffee, aim for 30 minutes of baking time.
  • Be cautious with the hot toffee—wear oven mitts when handling the baking sheets.
