A traditional and comforting Irish recipe, Colcannon is a hearty blend of creamy mashed potatoes, sautéed cabbage, and green onions. This dish is perfect for St. Patrick’s Day or any time you’re craving a flavorful, warm side

  1. 2 pounds potatoes, peeled and quartered
  2. 1/2 cup milk
  3. 4 tablespoons unsalted butter
  4. 1 small head of green cabbage, chopped
  5. 4 green onions, finely sliced
  6. Salt and pepper to taste

Instructions

  • Cook the Potatoes:

    • Place the peeled and quartered potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are fork-tender.
    • Once cooked, drain the potatoes and return them to the pot. Mash the potatoes until smooth and creamy.
  • Prepare the Cabbage:

    • In a separate pot, bring a small amount of water to a boil. Add the chopped cabbage and cook for about 5 minutes until tender. Drain and set aside.
  • Combine Ingredients:

    • In a small saucepan, heat the milk and butter over low heat until the butter is melted (do not let it boil).
    • Add the cooked cabbage and sliced green onions to the mashed potatoes. Pour in the warm milk and butter mixture. Stir until everything is well combined and creamy. Season with salt and pepper to taste.
  • Serve:

    • Serve the colcannon hot, with a small well in the center for a pat of butter if desired.

  • Colcannon is often served with a pat of butter in the center, which makes it even richer and more flavorful.
  • You can substitute the green onions with leeks for a different flavor profile.
