- 2 bricks (16 oz) neufchâtel cheese, softened
- 2 ½ cups canned artichokes, drained and roughly chopped
- 3 cups fresh spinach, chopped and packed
- ½ cup shallot, diced
- 1 cup plain Greek nonfat yogurt
- Optional: Parmesan and/or mozzarella cheese for topping
Instructions
- Preheat the oven to 400°F.
- Combine all ingredients (neufchâtel cheese, artichokes, spinach, shallot, and Greek yogurt) in a casserole dish.
- Bake for 15-18 minutes.
- Optional: In the last 5 minutes of baking, top with Parmesan and/or mozzarella cheese, and set the oven to broil to melt the cheese.
- Stir before serving and enjoy!
Notes
- For added flavor, sprinkle some garlic powder or red pepper flakes into the dip mixture.
- If you prefer a smoother dip, blend the ingredients before baking.
