Inspired by the flavors of a Reuben sandwich, this creamy pickle dip is packed with briny pickles, smoky pastrami, and sharp gruyere. It’s the ultimate party dip, ready in just 10 minutes! Perfect for serving with pita chips, flatbreads, or even as a spread for bagels

Ingredients

  1. 1/2 cup cottage cheese

  2. 1/2 cup cream cheese

  3. 2 tsp pickle juice

  4. 2 garlic cloves, crushed

  5. 1/2 tsp salt

  6. 1/2 cup pickles, finely diced

  7. 1 tsp chili flakes

  8. 2 tsp Dijon mustard

  9. 4 slices pastrami, diced

  10. 1/3 cup gruyere cheese, grated

  11. Handful of chives, finely sliced

Instructions

  • Blend the Base: In a food processor or blender, combine cottage cheese, cream cheese, garlic, Dijon mustard, and salt. Blend until smooth and creamy.

  • Mix in the Ingredients: Transfer the creamy mixture to a bowl. Stir in most of the chopped pickles, pastrami, chives, and gruyere, reserving some for garnish.

 

  • Garnish & Serve: Top with the remaining pickles, pastrami, chives, and gruyere. Sprinkle with chili flakes. Serve immediately with flatbreads, pita chips, or your favorite dippers.

Notes

  • You can adjust the level of spice by adding more or less chili flakes.

  • If you prefer a smoother dip, blend the mixture a bit longer or add a splash more pickle juice.

 

  • This dip can be made ahead of time and chilled in the fridge for a few hours for enhanced flavor.
